Refining:
Occurred racking and malolactic fermentation the wine is aged for about 5/6 months in steel while 5% is aged in barrels of second pass for 6 months. Before bottling is a blend of wines from different vineyards with a presence in about 60% of Sangiovese from vineyards around the eighth year of age, while the remaining 40% from mature vineyards.

Bouquet:
Vinous with a delicate bouquet reminiscent of violets, soft flavor intense and balanced.
Fermentation
The grapes to the winery are de-stemmed and crushed, transported through ribbons in fermentation tanks at a temperature of about 28/30 ° C. with a maceration for extraction of dyes and aromatic of about 10 days.
Colour:
Ruby red with violet edges sometimes tending to violet.
Taste:
Dry, balanced, sometimes even a little 'tannic, hints of berries with a bitter aftertaste.
Serving suggestions:
Sangiovese di Romagna DOC Superiore goes well with starters of cured meats, in dishes with red meats, roasts and medium cheese.
