It’s the version of the sparkling albana in modern key. In fact also for the Albana, autochtonous variety of Romagna, there is a tradition of little bubbles; in past it was bottled sweet and preserved in underground fresh wine cellars for a slow refermentation in bottle to get a bubble wine. Pleasantly fruity, it has a sweet taste but not cloying, well opposed from a good phenolic structure and from an acidity not too much low.

PRODUCTION TECHNIQUE partial withering of the grapes before wine pressing; vinification in white and fermentation of the must in autoclave. Refinement for at least 4 months before to put the product on the market.
