WINEMAKING: the grapes are harvested by hand and placed into boxes, then gently
crushed.Fermentation in tonneau with one year permanence on selected yeasts and periodic
batonage.
ALCOHOL: 14 % by volume.
COLOUR: intense straw yellow
ODOUR : flowery, fruity, with smell of acacia and peach blossom
FLAVOUR : dry and slightly tannic, warm and harmonious, sometimes fruity, with a
finish reminiscent of toasted almonds
SERVING TEMPERATURE: 14°C
PAIRING : freshwater and saltwater fish. This full-bodied white wine can be matched
with fish baked in foil, grilled meat, different types of soup and baked shellfish. It can be
drunk throughout the meal, especially in the summertime and when the menu does not
include too highly flavoured dishes like elaborate meats
